Pioneer of Chocolate Coenraad J. Van Houten was a Dutch chemist and chocolate maker born in 1801, son of Casparus van Houten. He treated cocoa mass with alkaline salts to remove the bitter taste and make cocoa solids more water-soluble, known as ”Dutch process chocolate”.

With his father, they introduced a method for pressing cocoa butter from roasted cocoa beans, resulting in the invention of the cocoa press. Their legacy of Dutch-process cocoa brought their indulgent cocoa to people worldwide.
